Hot and Spicy Tofu

Back when Taylor and I first started eating tofu I scoured the internet for some recipes.  I think Taylor actually found this one and we have it at least once a month now.  Before we even made it, I was wary because the person’s user name was “Ritalin Cindy”.  Served over rice, it is plenty for two.  If you aren’t a fan of spicy foods then you should definitely cut down on the red pepper flakes and not use the serrano pepper. Taylor and I had a box of tissues between us it was so spicy – but we like that.  Also I would think this would be tasty with meat instead of tofu if that freaks you out.  But this is a great recipe to get you started on tofu if you want to try it (Nana – I’m talking to you!).

3 Tbsp. canola oil
1/2 pound firm tofu, cubed
1 red onion, thinly sliced
1 red bell pepper, thinly sliced
1 serrano pepper, minced
3 garlic cloves, crushed
1/3 cup hot water
3 Tbsp. white vinegar
3 Tbsp. soy sauce
1 Tbsp. brown sugar
1 tsp. cornstarch
1 tsp. red pepper flakes
1. Heat oil in nonstick skillet over medium-high heat.  Add tofu and brown on all sides.  Add onion, peppers, and garlic and cook until tender.
2. While the vegetables are cooking, whisk together remaining ingredients in a small bowl.  Add to skillet and simmer for 5 minutes.
3. Serve over rice.
