Back when Taylor and I first started eating tofu I scoured the internet for some recipes. I think Taylor actually found this one and we have it at least once a month now. Before we even made it, I was wary because the person’s user name was “Ritalin Cindy”. Served over rice, it is plenty for two. If you aren’t a fan of spicy foods then you should definitely cut down on the red pepper flakes and not use the serrano pepper. Taylor and I had a box of tissues between us it was so spicy – but we like that. Also I would think this would be tasty with meat instead of tofu if that freaks you out. But this is a great recipe to get you started on tofu if you want to try it (Nana – I’m talking to you!).
3 Tbsp. canola oil1/2 pound firm tofu, cubed1 red onion, thinly sliced1 red bell pepper, thinly sliced1 serrano pepper, minced3 garlic cloves, crushed1/3 cup hot water3 Tbsp. white vinegar3 Tbsp. soy sauce1 Tbsp. brown sugar1 tsp. cornstarch1 tsp. red pepper flakes1. Heat oil in nonstick skillet over medium-high heat. Add tofu and brown on all sides. Add onion, peppers, and garlic and cook until tender.2. While the vegetables are cooking, whisk together remaining ingredients in a small bowl. Add to skillet and simmer for 5 minutes.3. Serve over rice.
