The first time we visited the Inn Above Onion Creek we had the most delightful almond cake. We were lucky enough to have it again this weekend and it is pretty much amazing. They have the recipe posted on their website and I think I’m going to make it every day.
3/4 cups of butter
1 1/2 cups of sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 1/2 teaspoon almond extract
1 1/2 cups of flour
1 Tbsp sugar
3/4 cup of sliced almonds
1. Preheat the oven to 350 degrees.
2. Melt butter. Pour melted butter in a bowl and stir in sugar. Add eggs. Stir until creamy. Add all other ingredients.
3. Grease bottom and sides of a springform pan. Spread the batter in the pan.
4. Sprinkle the almonds over the top and add sprinkle the sugar.
5. Bake for 40 mins.
