Yes, it is mozzarella. You start with a half gallon of really good quality whole milk, vegetable rennet, and citric acid. The last two things you can buy for pretty cheap on Amazon and will last for many batches. The whole process takes about an hour and is labor intensive. But the second you bite into that mozzarella you don’t care. The nice half gallon of milk was around $3.50 and the final product was half a pound, so it is around $7.00 a pound to make. Whole Foods sells their homemade mozzarella for $9.00 a pound. Some may say the extra $2 is worth it to just buy pre-made but this tastes so much better.
