A Week of Meals

Guess what?  It’s another food post.  This is what happens when I have no organization here!  Things get crazy!  I thought I would post the meals we are having/have had this week because you all want to know everything about me, right?  This is dinner only because breakfast for us is the same every week: fruit smoothie (made lovingly every morning by Taylor), oatmeal, and a hard-boiled egg (for me).  Lunch is a sandwich, carrots, and an apple for me and fancy new meals every day for Taylor at school.  Our joke when he looks at the school menu is to say in exasperation, “London broil again?”.  He hasn’t actually ever had it but I saw it on the menu the very first day he started and here we are over a year later making the same joke.  MARRIAGE.

Sunday: Onion Cheddar Polenta and Roasted Root Vegetables

Monday: Yellow Split Pea Dal

Tuesday: Tomato Basil Soup with Easy Drop Biscuits

Wednesday: Egg Stuffed Baked Potatoes with cheese, banana peppers, and black beans

Thursday: Lentil Stew with Lemon Yogurt Cream

Friday: Vegetarian Enchiladas

Saturday: Pasta al Pomodoro
